GEOFF’s Mussels with a Tomato Base…

Whenever I crave a taste of the Mediterranean, I turn to one my favourite mussel dish’s: mussels simmered in a rich tomato and garlic broth. I start by sautéing minced garlic and diced shallots in olive oil until they’re fragrant. Then, I add chopped tinned tomatoes and a splash of verjuice, letting the mixture simmer to meld the flavours. To bump the flavour you can add 60ml of homemade fish stock. Add the mussels from Boston Bay, cover the pot, and cook until they open, releasing their briny essence into the sauce. A generous dollop of butter adds silkiness, and a sprinkle of fresh parsley and basil brightens the dish. Served with crusty grilled bread, it’s a simple yet elegant meal that transports me straight to the seaside.
